Ingredients:
- 1 lb (450 g) of ground beef
- 1 egg
- 3 tablespoons of tapioca starch
- 1 tablespoon of cornstarch
- 1 teaspoon of salt
- 1/2 teaspoon of black pepper
- 4 cups (1 liter) of beef broth
- 1 cup (250 ml) of water
- 2 stalks of celery, finely diced
- 1 small onion, finely diced
- 2 cloves of garlic, finely minced
- 1 teaspoon of salt
- 1/4 teaspoon of black pepper
- 4 green onions, finely sliced
Instructions:
- In a large bowl, mix together the ground beef, egg, tapioca starch, cornstarch, salt, and pepper until well combined. Roll the mixture into small balls, about the size of a golf ball.
- Bring the beef broth and water to a boil in a large pot over high heat. Reduce the heat to low and add the celery, onion, garlic, salt, and pepper. Simmer for 5 minutes.
- Add the meatballs to the pot and simmer for an additional 10-15 minutes, or until the meatballs are cooked through.
